Lentil Quinoa Greek Salad Lately, I’ve been looking for high protein plant based meal options. After digging through my cupboard and fridge, I came across two bags of quinoa and lentils I had bought a while ago around the time everybody decided these were the new it grains. While searching the web for recipes and directions on how to cook these I came across a few interesting facts. Like.. Lentils are highly digestible, low in fat, high in protein, folate, phosphorus, fiber and iron Quinoa is packed with protein, gluten-free, a complete protein, and is high in antioxidants I decided I’d like my protein served cold that day, so I made my version of a Greek salad and it was amazing! Perfect thing to cool off during these hot summer days. This is the perfect plant based meal I’ve been looking for. Jam packed with 24 grams of protein per serving, it’s basically a protein shake you can eat and feel good about. I’ve since made this salad a couple of times and have varied the way I eat it.
