Low Carb Paleo / Bacon Blueberry Salad

  Lately I’ve been in a low carb salad rut. For the past couple of weeks my dinners have consisted of some sort of protein (mostly beef) and my usual side salad of romaine and my diy vinagrette dressing. Exciting, I know. Trying to eat as clean as possible while still eating the foods I like has been as interesting journey filled with highs and lows. Like when I used up my last six eggs to make low carb cinnamon cookies that tasted like cardboard or discovering that adding an avocado to my smoothie gives it this amazing creaminess I thought I could only achieve with heavy cream. Cutting dairy out of my diet has been especially hard particularly when it came to salad making. Cheese is the perfect ingredient to tie ingredients together. Oh and it makes me happy! I often topped my salads with crumbled feta of goats cheese. But after realizing that the reason I may was feeling bloated and sluggish half the time was due to too much dairy I had to quit cold turkey because the relationship I had with cheese was non negotiable. Lentil Quinoa Greek Salad   Lately, I’ve been looking for high protein plant based meal options. After digging through my cupboard and fridge, I came across two bags of quinoa and lentils I had bought a while ago around the time everybody decided these were the new it grains. While searching the web for recipes and directions on how to cook these I came across a few interesting facts. Like..   Lentils are highly digestible, low in fat, high in protein, folate, phosphorus, fiber and iron Quinoa is packed with protein, gluten-free, a complete protein, and is high in antioxidants   I decided I’d like my protein served cold that day, so I made my version of a Greek salad and it was amazing! Perfect thing to cool off during these hot summer days. This is the perfect plant based meal I’ve been looking for. Jam packed with 24 grams of protein per serving, it’s basically a protein shake you can eat and feel good about. I’ve since made this salad a couple of times and have varied the way I eat it.
